You can find small, two-part moka pots in almost every Italian home; they are easy to use, and the coffee you get is full-bodied and richly aromatic. Invented in Italy in the 1930s and produced by Bialetti since the early 1950s with its iconic 8-sided shape, the Bialetti Moka Pot (3 Cups) - Black moka pot consists of a cylinder (bottom chamber), a funnel-shaped filter, an upper chamber where the coffee collects, and a second, detachable filter attached to the bottom of the upper chamber via a gasket.

Water heated in the bottom chamber rises with 2 atmospheres of steam pressure, passes through the ground coffee in the filter, and collects as liquid coffee in the upper chamber. Although the operating principle of the Bialetti Moka Pot (3 Cups) is this simple, making a good moka requires some practice, a careful eye, and properly ground coffee – never use very finely ground coffee.

To prepare moka with the Bialetti Moka Pot (3 Cups):

  • Fill the lower chamber with drinking water up to the lowest point of the valve on the chamber's surface;
  • Place the funnel-shaped filter on top of the lower chamber, filling it loosely with ground coffee without pressing it down;
  • After ensuring that the gasket and filter in the upper chamber are correctly installed, tightly screw the two chambers together – do not force the handle on the upper chamber to tighten or loosen;
  • Place the moka pot on the smallest burner of your stove, set to low heat – leaving the lid of the upper chamber open will help you catch the moment the coffee starts to emerge;
  • Remove the pot from the stove just before the coffee starts to form air bubbles as it emerges from the column in the upper chamber – this ensures you get the best parts of the coffee;
  • After waiting a short time, you can stir your coffee with a spoon and serve it;
  • Clean your cast aluminum pot by simply rinsing it in lukewarm water; do not wash it in the dishwasher, and do not use soap or similar materials when washing.
