You can find small, two-chamber moka pots in almost every home in Italy; they are easy to use, and the coffee you get is full-bodied and richly flavored. Invented in Italy in the 1930s and produced by Bialetti since the early 1950s with its iconic 8-sided shape, the Bialetti Moka Pot (6 Cup) - Grey moka pot consists of a cylinder (lower chamber), a funnel-shaped filter, an upper chamber where the coffee collects, and a second, detachable filter attached to the bottom of the upper chamber via a gasket.

The water heated in the lower chamber rises with 2 atmospheres of steam pressure, passes through the ground coffee in the filter, and collects as liquid coffee in the upper chamber. Although the working principle of the Bialetti Moka Pot (6 Cup) is this simple, making a good moka requires a bit of practice, a keen eye, and correctly ground coffee – never use very finely ground coffee.

To prepare moka with the Bialetti Moka Pot (6 Cup):

  • Place drinking water in the lower chamber up to the lowest point of the valve on the chamber's surface;
  • Fill the funnel-shaped filter with ground coffee without pressing it down, loosely, all the way to the top, and place it on top of the lower chamber;
  • After ensuring that the gasket and filter in the upper chamber are correctly installed, firmly twist the two chambers together – do not force the handle on the upper chamber to tighten or loosen;
  • Place your moka pot on the smallest burner of your stove, lit on low heat – keeping the lid of the upper chamber open will help you catch the moment the coffee starts to come out;
  • Remove your pot from the stove just before your coffee starts to form air bubbles as it comes out of the column in the upper chamber – this way, you will get the best parts of the coffee;
  • After waiting a short time, you can stir your coffee with a spoon and serve it;
  • Clean your pot, which is made of cast aluminum, only by rinsing it in warm water; do not wash it in the dishwasher, and do not use any soap-like material when washing.
